Hello! foodies! As we all know Idli is a south Indian Cuisine. It is consumed mostly in South India as breakfast or as lunch also. Idli is consumed with sambar and a special coconut chutney. It is said to be have some digestive as well as nutritious properties.

Rava Idli |
Idli is made of Rice flour and flattened rice flour (chewda , poha) with added Eno (fruit salt) and citric acid. We can make it either by fermenting it for some time or without fermenting as well. No , I am not making Rice Idli. I am making "Rava Idli" , so for rava idli we replace rice flour and flattened rice flour with Rava (semolina ; sooji ). Rava idli is the other version of regular idlis. Rava Idli are steamed cakes made of sooji ; semolina , salt and a rising agents.

The most Common question that arises when making Idli is "How to make soft and fluffy Idlis ? "
Don't worry here is my all time tested and tried instant soft rava idli. We humans are lazy and want to finish our work as soon as possible and suddenly comes our children's craving for Idlis. We don't want to waste our time working in kitchen for long and yes our childrens can't wait to have idlis. Now making instant Idlis without much fermentation is possible :D
I'm making rava idli with eno. You can make it either by using baking soda as well.
Suggestions for best Rava Idlis -
DOs and DONTs :- You can make rava idli by roasting it as well depending on your rava texture. If your rava is somehow coarse then you must roast it in ghee or oil for 5 minutes on medium flame otherwise your rava will become sticky. I am not roasting it because my rava (sooji , semolina or bombay rava) is fine.
- Dont try this recipe without eno or curd. These two are the main key ingredients for making your idlis soft and fluffy and for making the best rava idli. Use both the ingredients in proper and in given proportions.
- Do use eno , it will not make your rava taste soapy because we have added curd in it.
- Do not add sour curd in it otherwise it will leave it's sourness in our idlis.
- Do use of lemon juice if you are using baking soda in place of eno. Just add 2 teaspoons of lemon juice in batter along with baking soda a minute before steaming.
Frequently asked question : Is rava Idli healthy ?
Ans : No rava Idli is not healthy because Rava (semolina , sooji) is a processed food so everything in moderation is fine :)Following is the recipe :
Cooking Time : 40 minutes
Resting Time : 30 minutes
Prep Time : 10 minutes
Serves 3
Ingredients for Rava Idli :
Rava (Semolina).................... 500 grams
Fresh Curd (dahi , yogurt)...... 200 grams (Shoul not be sour)
Eno (fruit salt)........................ 2 tsp (or baking soda)
Salt......................................... to taste
Oil for greasing.......................1 tbsp
Water..................................... 150 ml (or more according to batter consistency )
Water for steaming................ 600 ml ( 150 ml each time for four times )

How to make Recipe of Rava Idli ?
Rava idli Batter :
- Take a bowl , add 500 gms rava into it.
- You can add roasted rava instead as you read above.
- Along with it add 200 gms curd (yogurt ;dahi) , salt to taste and 150 ml water or more as per consistency.
- Mix all these properly ensuring no lumps into it.
- Cover this and keep it aside for rest for atleast 30 minutes without disturbing.
- After 30 minutes , checkout the batter and add more water if required as per the consistency.
- Your batter should niether be too thick nor too thin. The batter should be little thick and smooth as like regular idli batter.
- Check it by dropping it with a spoon. It should not create any lumps when dropped. It should not be of pouring consistency.
How to Steam Rava Idli ?
- Boil 150 ml water in a pressure cooker or steamer. Make sure the water should not touch the moulds that you place there.
- When the water is about to boil , take another bowl and pour some batter into it (don't pour all the batter because you can't be able to make all the idlis together). You have to make it 3 to 4 times because of the limited moulds (idli maker).
- Before transferring the batter to moulds , grease the moulds with little oil to prevent sticking.
- Now add 1/2 tsp Eno (fruit salt) or baking soda (with lemon juice) into the bowl and give it a good mix. Don't over mix it , you have to steam it immediately for making it soft and fluffy.
- Immediately transfer this batter to moulds and place it over the pressure cooker or steamer.
- If making in cooker then cover it with lid by removing it's whistle.
- Steam it for 10 minutes on low flame. Check it by inserting a knife or fork. If the rava idlis are done then the knife will come out clean or with little crumble.
- Turn off the gas flame and allow it to cool for 4 to 5 minutes.
- Remove the rava idli from mould with a knife or a wet spoon.
- Make all the rava idlis just like this and serve it with Coconut chutney and Sambar or you can munch it as it is.
- Tadaa Rava Idli is Ready :)

Rava Idli recipe Images : (step by step)
Step 1. Take 500g semolina (rava,suji) in a bowl.
Step 2. Add curd (yogurt;dahi) and salt to taste and make a thick batter. Let it rest for 30 minutes.

Step 3. Before making idli , grease some oil at idli moulds to prevent idlis from sticking.

Step 4. Check the batter consistency by dropping a spoon of batter. It should not be of pouring consistency or any type of lumps. The batter should be like this.

Step 5. Take 2 cup batter in another bowl and add 1/2 tsp eno , mix well. Do not over mix it.

Step 6. Boil 150 ml water in a steamer or cooker. After adding eno in batter it suddenly start producing bubbles. Pour this batter immediately into idli moulds.

Step 7. Place it in steamer or cooker and steam it for 10 minutes on medium flame.

Step 8. Check it with a knife or fork. If it comes clearly then your idli is ready and if not then steam it for more 3-4 minutes. Let it cool down for 4-5 minutes and then remove it out from mould with a knife or wet spoon.

Step 8. Your soft and fluffy rava idli is ready. Serve it with sambar and coconut chatni or munch it as it is.
