What to say about chhole (chickpea curry) ? At every streets of India, you will definitely find a shop of Chole Bhature. Am I right ?
But when it comes to homemade chole, then we don't have to go outside. Chole is made in almost every Indian homes as it is healthy and delicious as well.
Chana masala recipe can be made in many ways, like chickpeas chhole , green peas chole, bengal gram chhole , and of course of pegion peas also. But I am talking about Kabali Chana Chole or chickpeas chhole eaten with Bhature.
If you have to make chickpeas (kabuli chhole) , follow these simple steps below. I am going to tell you the easiest way to make Kabali Chole which you can make instantly.
To make Kabli Chole like market, you only have to use 2 secret ingredients and you will be surprised to see the effect. Most of the spices play its role in Chhola. Chole is the traditional food of Punjab.
So let's start making Kabali Chola recipe. You will need these ingredients to make chickpeas.
Cooking time: 45 minutes Serves 3
Ingredients of Kabali Chole:
Kabuli chana (chickpea)..... 200 grams
Onion …………………… 400 grams
Ginger-Garlic Past............... 1 tsp
Tomatoes.............................. 2 medium sizes
Salt....................................... as per taste
Garam masala powder…...... 1 tsp
Asafoetida (hing).................. 1 pinch
Bay leaf................................. 2
Dry red chilli........................ 2
Turmeric Powder ................ 2 teaspoons
Cumin Powder ……............ 2 teaspoons
Red chilli powder..........….... 1 tsp
Amchur powder ………....... 2 teaspoons
Oil........................................ 50 ml
Baking Soda ....................... 1/2 small spoon (secret ingredient)
Tea leaves............................. 2 teaspoons (secret ingredient)
Kasuri Methi....................... 1 spoon
Coriander leaves................. 1/2 handful
Water................................... 500 ml

Cumin Powder ……............ 2 teaspoons
Red chilli powder..........….... 1 tsp
Amchur powder ………....... 2 teaspoons
Oil........................................ 50 ml
Baking Soda ....................... 1/2 small spoon (secret ingredient)
Tea leaves............................. 2 teaspoons (secret ingredient)
Kasuri Methi....................... 1 spoon
Coriander leaves................. 1/2 handful
Water................................... 500 ml
Instructions for chhole recipe :
- To make Kabali Chole, first soak 200 grams of Kabali chana (chikpeas) in 600 ml water overnight or for 4 to 5 hours.
- Heat oil in a pressure cooker. Once the oil is hot, add two bay leaves, 1 teaspoon ginger garlic paste, 2 dried red chillies and a pinch of asafoetida. Cook for one minute and then add 400 grams of finely chopped onions.
- Turn down the heat to medium flame as we have to saute it on medium flame for about 10 to 12 minutes. While stirring the onion continuously, add turmeric powder and red chili powder to it and mix well.
- When the onion turns light brown , add chopped tomatoes and salt (to taste) into cooker and mix it well so that our tomatoes cook well. Roast it till the oil starts separating from it. Keep stirring it continuously to prevent it from sticking.
- While your tomato and onions are cooking , heat 250 ml of water in a pot on another gas and add 2 tsp tea leaves. Let it boil for 8 to 10 minutes and then turn off the heat. I will add this tea on our chhole later , till then keep it aside.
- When the oil starts separating from the veggies, wash the soaked Kabali Chana properly and then pour it in cooker.
- Now it's time for our dry spices. Add 2 teaspoons cumin powder, 2 teaspoons mango powder (aamchur powder) to the cooker and mix well. It is very important to have sourness in chole, That's why I have used mango powder here.
- You can add a little more salt if you want. Cook well for 2 minutes and then strain our tea with a sieve and add 1/2 teaspoon baking soda into the pressure cooker along with it.
- Yes, I am using tea and soda to make restaurant style chhole. If you want, you can also use dry gooseberry (amla) instead.
- As soon as you put tea and soda in the cooker, a lot of bubbles will start forming in the cooker. Add some more water to it. And this is the time when you have to put the lid of the cooker and cook it till 7 to 8 whistles.
- After 7 to 8 whistles, turn off the gas flame. When the lid of pressure cooker will open, then add 1 teaspoon garam masala powder to it and 1 teaspoon crushed Kasuri Methi (Fenugreek leaves).
- This will give a very nice flavor in our chana masala. If you want, you can also use chhole masala in place of garam masala powder.
- Chole is ready to serve :o Garnish with some finely chopped coriander leaves and serve it with bhatura, rice, poori or kulcha.
