Dhokla is very heart touching recipe as the people of Gujarat commonly known as gujaratis consumes it the most. I personally love gujratis the most. soo karuchu mota bhai !!

Dhokla is a spongy (bread like structure) cuisine which is so juicy and flavory. It tastes so good even it do not contains too much spices.

It is made of gram flour which have it's own taste. So let's begin the making of Gujarati Khaman dhokla recipe in english.

I am making it without citric acid and believe me it will turn out to be the best khaman dhokla you have ever made at your home.

KHAMAN DHOKLA 

             KHAMAN DHOKLA RECIPE

Preparation time : 70 MINUTES 

Serves 3 


Ingredients for dhokla :

Gram flour (besan)........................ 500 grams
Coriander leaves........................... (fine chopped)
Salt ............................................... as per taste
Asafoetida (hing).......................... 1tsp 
Mustard seeds............................... 2 tsp 
Curry leaves.................................  8-10
Eno (fruit salt).............................. 1 tsp
Green chillies finely chopped.....  8-10 
Lemon juice of............................  2 lemons
Ginger.......................................... 1 small piece 
Powdered sugar........................... 1 tbsp
Oil for tempering........................ 1 tbsp
Sugar for tempering.................... 3 tsp
Water.......................................... 750 ml 



Gujarati Khaman Dhokla Recipe  :

  • To make dhokla , first of all strain the gram flour into a big bowl with a strainer so that the thick granules will get left behind and you'll get a smooth and fluffy batter. 
  • Take a bowl and add salt , 1 lemon juice  , fine chopped ginger, fine chopped green chillies, 1 tbsp powdered sugar and 1 tsp asafoetida with 250 ml water into the bowl. 
  • Mix all this ingredients properly and then add little water step by step and make a thick batter of gram flour. Don't add much water directly otherwise it will create lumps in your batter. Add it in installments  and mix it with a spoon properly.
  • Your batter should niether too thick nor too thin , check it by dropping some batter with your hands or spoon. If it flows easily and restlessly then your batter is ready.
  • Whisk it in one direction with your hand for atleast 10 to 15 minutes. 
  • This work of whisking is the only hard work you have to do for making the dhokla. 
  • After whisking it continuously for 10 minutes , keep it for rest for at least 15 minutes.
  • After 15 minutes of complete rest whisk it once more for 5 minutes so that the protein get activated once again which will make your dhokla fluffy and then add 2 tsp eno (fruit salt) into it and whisk it again thoroughly only for seconds. 
  • Now without taking any time add this batter into a container in which you want to make your dhokla. 
  • Take a big pan and boil some water (about 200 ml) in it. 
  • Make sure that you should be able to put your container into that pan easily.
  • Put a stand into the pan. 
  • Now put the container over the stand
  • Put the gas on medium flame and cover the lid gently. 
  • Cook it for at least 20 to 25 minutes at medium flame. 
  • After 25 minutes put off the gas flame and let it rest for 5 minutes. 
  • Don't open the lid for five minutes and it will give you more better result.


For tempering :

  • Now your dhokla is ready but it is incomplete without a tempering (tadka) over it. 
  • So for making a tempering heat 1 tbsp of oil in a pan. 
  • Add mustard seeds and let it crackle. 
  • Add some slit green chillies , curry leaves 
  • Add 1 cup of water into it. It will produce some sizzling sound. 
  • Now after adding water add 3 tsp sugar and 2 tsp of lemon juice. 
  • Put off the gas flame and let it get luke warm
  • Add this luke warm tempering over the dhokla and enjoy your day. 
  • Khaman dhokla is ready. Garnish it with some fine chopped fresh coriander leaves and some type of dips and chutneys.
