It is also called seviyan , semiya payassam, vermicelli kheer or seviyan.
It is made in many ways and specially on the occasion of Eid. Eid seems incomplete without sevai. So you must serve it at your home.
I am telling you the easiest way to make sevai ki kheer. It is very easy to make.You will easily find a packet of vermicelli in the market.
It is made from milk and vermicelli. To make it even more delicious, you can add your favorite rose water, saffron threads, pistachios, almonds etc. in it.
So let's start the making of sevai recipe. You will need these ingredients to make savai.
Cooking time: 30 minutes Serves 3
Ingredients for sewai :
Milk 1 liter
Vermicelli 50g
Almonds 8 to 10
Pistachios 5 to 6
Raisins 1/2 fist
Cardamom powder 1 pinch
Rose water 1 teaspoon (optional)
Sugar 2 tablespoons
Cashew nuts 8-10

Instructions for seviyan recipe :
- To make sevai, first boil the milk in a vessel.
- On the other side, roast vermicelli in a pan. You can roast it in desi ghee or without desi ghee. I am roasting it without ghee.
- If you want to roast in ghee, then put 1/2 teaspoon of desi ghee in the pan and fry for 5 minutes on medium flame.
- Similarly, roast the vermicelli for 5 minutes without ghee.
- And if you don't want to roast it, then roasted vermicelli is also available in the market, you can take it, it will make your work easier.
- After roasting the vermicelli, pour it directly into boiling milk. Cook it on a medium flame for 8 to 10 minutes. Stir it continuously.
- After 10 minutes, add 8 to 10 finely chopped almonds, 8-10 cashews (kaju), 5 to 6 pistachios and 1/2 handful raisins and cook on medium flame.
- You have to cook until the milk is half done.
- When your milk is almost reduced to half, then add 2 tbsp sugar, 1 pinch of cardamom powder, 1 tsp rose water and mix well.
- If you want, you can also put 2-4 saffron threads in place of rose water or you can put both and if you do not want to add both , just skip it.Your sevai will still be best.
- Cook it for 5 minutes and turn off the flame. Sevai recipe is ready. You can serve it hot or after cooling for 3-4 hours.

Step 1. Boil milk in a container
Step 2. Roast 50 g vermicelli
Step 3. Add roated vermicelli in boiling milk and cook for 10 minutes by stirring it continuously
Step 4. Add chopped almonds, cashews, pistachios, raisins and cook till half of the milk get reduced.
Step 5. Add sugar , cardamom powder , rose water or saffron. You can skip both rose water as well as saffron as well. Mix well and serve :)
